Keto Granola & Berry Parfait with Skyr Cream.
A healthy, delicious dessert that needs just 10 minutes preparation. 4g net carbs.
No cooking, baking or heating anything. Simply whip up some cream and the rest is child’s play. I’ve chosen Skyr for my keto-friendly dessert, because it is absolutely delightful, packed with probiotics, and very low carb.
If this Icelandic yoghurt (Skyr is technically a cheese) isn’t available to you, plain Greek yoghurt makes a good substitute, although it’s slightly more acidic.
How to Make Keto Granola & Berry Parfait with Skyr Cream
Being an American version of parfait, it doesn’t require egg, sugar syrup, cooking, or freezing, as a true French parfait would require. All that needs doing is whipping the cream with vanilla and sweetener, combining the Skyr and then placing layers in a pretty serving glass or bowl.
It’s easy to customise, too. Swap strawberries for other berries you prefer. You can create a layer with chopped up berries, or combine them with the cream. You could even make a quick coulis to swirl into the cream. Or create multiple layers.
You might even prefer to leave out the berries altogether and just spoon your granola over a few dollops of the Skyr cream. Voilà. You have an instant breakfast or dessert.
As for the granola, the UK doesn’t offer many options in terms of shop-bought choices that are truly keto-friendly or don’t cost a kidney. Try my super-delicious Keto Granola.

Keto Granola & Berry Parfait with Skyr Cream
Ingredients
- 80 g whipping cream
- 80 g Skyr (I use Arla 5% fat)
- 15 g Sukrin icing 'sugar' (U.S. option HERE), or you can use Swerve (U.S. option HERE)
- 6 drops vanilla extract (U.S. option HERE)
- 40 g strawberries (net weight)
- 50 g Keto Luxury Hazelnut Granola (U.S. alternative HERE)
Instructions
- chop strawberries.
- whip cream together with icing 'sugar' and vanilla extract until firm, stir in skyr.
- place 20g granola at the bottom of each tumbler, add a layer of Skyr cream, then strawberries (reserve a few small pieces), followed by another layer of Skyr cream.
- sprinkle remaining granola crumbs and top, and decorate with the reserved strawberry pieces.
- serve immediately or up to 24 hours later if assembled.
