How to Make Magic Keto Brownies
They’re ready for baking in minutes, and you don’t need any electrical equipment. Just a metric food scale, a spoon, a spatula and a wire whisk will suffice.
Boil some water and stir in coffee and butter.
Weigh and mix all dry ingredients.
Lightly beat the eggs until just starting to froth up, tip in coffee mixture and dry ingredients, then stir with a spatula until you obtain a homogenous batter.
Scoop it into a square silicone pan, level it, and bake.
15-20 minutes later, you’ll have baked the best keto brownies ever! My oven actually bakes these brownies to perfection in 18 minutes. Do a stick test after 15 minutes. If the stick comes out wet, continue to bake for another 3 minutes, then check again. Once you’re happy with the stick test, remove the pan from the oven immediately. Don’t leave them in the oven after 20 minutes, unless you want cake.
Once cooled, refrigerate until set, then slice into 9 squares.
Your Magic Keto Brownies will remain fresh for up to 7 days if kept refrigerated in a sealed container.

Ingredients
- 3 eggs
- 80 g unsalted butter
- 45 g erythritol (U.S. option HERE)
- 40 g cocoa powder (U.S. option HERE)
- 25 g coconut flour (U.S. option HERE)
- 10 g bamboo fibre (U.S. option HERE)
- 10 g inulin (U.S. option HERE)
- 4 g 1 tsp baking powder
- ½ tsp coffee powder or granules
- ½ tsp xanthan gum (U.S. option HERE)
- ½ tsp pure stevia powder (U.S. option HERE)
- 1 tsp liquid sunflower lecithin (U.S. option HERE)
- 1 pinch fine himalayan pink salt (U.S. option HERE)
Instructions
- pre-heat oven to 170 °C static.
- heat 50g water and stir in coffee, then add cubed butter and sunflower lecithin, stirring until liquid.80 g unsalted butter, ½ tsp coffee powder or granules, 1 tsp liquid sunflower lecithin
- weigh and mix dry ingredients in a large glass bowl.45 g erythritol, 40 g cocoa powder, 25 g coconut flour, 10 g bamboo fibre, 10 g inulin, 4 g 1 tsp baking powder, ½ tsp xanthan gum, ½ tsp pure stevia powder, 1 pinch fine himalayan pink salt
- beat eggs lightly using a manual wire whisk - just until they begin to froth, then tip in coffee mixture and dry ingredients, and combine.3 eggs
- scoop into an 8" square silicone mould, using a flexible silicone spatula to spread and flatten the batter evenly.
- bake 18 minutes (see recipe notes) and immediately remove from oven.
- once cooled, refrigerate until set.
- remove from mould and cut into 9 squares.
