They’re equally handy as appetisers, or alongside any main protein meal.

Super-easy, quick, and addictive (but in a good way), they can be customised however you prefer.



How to Make 3-Ingredient Carnivore Roll-Ups

No surprise of ‘extra’ ingredients here, dear readers. You really do need only 3 ingredients. Cheese slices, cream cheese, and mortadella.

Although – if you prefer a more keto-friendly snack, you can certainly add whatever suits you. Like sliced avocado or a leafy green veggie.

And if you like spicy food, just mix your favourite spices or chillies into the cream cheese before you spread it.

If I had small children, making these roll-ups would be their job. They’d be kept busy for a bit, plus they would be eager to taste them, and would declare them delicious, whether they like them or not, because they made them. Yippee-yey!

So here are the very simple steps.

You need to make the outer ‘skin’ first. Which is basically melted cheese that forms a sheet. Lay the cheese slices slightly overlapped as shown below, and bake for 5 minutes.

Once you’ve allowed the ‘skin’ to cool, you just have to spread the cream cheese over it, lay slices of mortadella on top, and roll-it up. Wrap the roll tightly with cling film and then foil (for sturdiness) and refrigerate it for at least a couple of hours. Then it’s ready to slice and enjoy.

I reckon even Nigella would be able to do this one, lol. In fact, I’m surprised that she hasn’t created an entire TV episode for roll-ups, much like her infamous one for mashed avocado on toast. I can think of many ways in which this recipe could be a perfect candidate for her sultry looks and double-entendres. In case any woke snow-flake might be reading this, I actually love Nigella, and not just for her comedic antics.



3-Ingredient Carnivore Roll-Ups Substitutions

The world is your oyster. For the outer ‘skin’, I have previously used Mozzarella, Jarlsberg, and Maasdam slices instead of Edam cheese. I prefer Edam, because Mozzarella is too bland in flavour, and the others have too many holes, which make the filling ooze out. Hello Nigella….

For the filling, I have used salami, prosciutto cotto, prosciutto crudo, bresaola, and coppa, with different soft and spreadable cheeses.

Ultimately, there is no right or wrong way to make these roll-ups.  Keto with added greens. Carnivore without.

Ingredients

  • 200 g cheese slices (6 slices)
  • 150 g cream cheese
  • 110 g mortadella (6 slices)

Instructions

  • pre-heat oven to static oven170 °C static.
  • lay the cheese slices, slightly overlapped, on a silicone baking sheet, to form a square or rectangle.
    200 g cheese slices
  • bake 5 minutes; remove from oven and leave to cool.
  • once the cheese ‘skin’ has cooled, spread cream cheese all over, then add mortadella slices on top.
    150 g cream cheese, 110 g mortadella
  • roll the long side tightly, wrap with cling film, then with foil.
  • refrigerate the roll for at least 2 hours before cutting it into 2cm/3/4” slices and serving.

With identical ingredients, 3 Roll-Ups = less than 1g carbs.
Any thin-sliced charcuterie meat can replace mortadella (prosciutto, salami, coppa, bresaola, roast beef, etc.)
Edam can be replaced with Jarlsberg, Maasdam, Gouda, Mozzarella, etc.
Cream cheese can be swapped for goats cheese or any other soft and spreadable cheese.
