I am absolutely thrilled to share today’s recipe with you! Finding a dish like this is pretty rare, since hitting that zero-carb mark doesn’t mean sacrificing top-tier nutrition. Asparagus brings a powerhouse of healthy fibre and nutrients to the table. Bacon is, of course, bacon. And grass-fed butter from pasture-raised cows? Simply unbeatable.

Hitting zero carbs here is just the icing on the keto cake, honestly. It isn’t a metric I usually go for.

So, while I am over the moon to publish this brilliant recipe, I definitely don’t want anyone getting the wrong impression about zero-carb diets.

Let me be crystal clear. Gorging strictly on zero-carb foods just to fast-track weight loss and boost ketosis is NOT an approach I would ever recommend.

  • Firstly, an abundance of ketones isn’t always beneficial, and dropping weight too rapidly isn’t ideal—unless you happen to love the excess loose skin that comes from extreme, sudden weight loss.

  • Secondly, slashing every single carb from your life doesn’t automatically accomplish either of those goals anyway.

  • Thirdly, and this is crucial, taking such a radical step means cutting out foods packed with vital phytonutrients, minerals, and antioxidants.

  • Lastly, restricting your food options that severely would make life incredibly boring.

A high-fat, low-carb lifestyle is unquestionably the healthiest way to eat, provided you include the proper foods, especially plant-based ones. I will forever be a loud, vociferous proponent of a diverse diet loaded with fibrous veggies.

Being an omnivorous species, we NEED a wide spectrum of nutrients to maintain our health—not just for today, but for our future as we age. ’nuff said.

A Lightning-Speed Side Dish

My Zero-Carb Bacon-Wrapped Asparagus & Orange Butter is completely foolproof to make and outrageously delicious.

All you have to do is wrap a rasher of bacon or pancetta tightly around each individual spear, then throw them straight into the oven. You will barely have a moment to whip up the orange butter before the asparagus is completely done.

Instructions

  • remove the fibrous lower part of the asparagus by bending the stalk 1-2 inches from the bottom until it snaps naturally.
  • wind 1 bacon or pancetta rasher around each asparagus spear, starting from the bottom and working up towards the tip.
  • place on a rack on top of an oven tray to catch any dripping fat.
  • bake at 180C fan or 200C static (no need to pre-heat) for about 30 mins or until bacon/pancetta is crispy.
  • for the orange butter, soften butter until it has a cream cheese consistency and stir in grated orange zest (rind only, no pith) and orange extract.
  • serve piping hot with orange butter melting over the spears.

Notes

When wrapping the bacon/pancetta, make sure the fat edge is exposed and there is minimal overlap; it will give you a more even, crispy result. Laying the wrapped spears on a suspended tray will also ensure improved circulation of heat and a better result.
