Christmas is approaching fast and it’s Panto time! OH YES IT IS! If you’ve never been to Panto, put it on your list of things to do at least once. It is so much fun. It is a misconception that Panto is just for kids. OH NO IT’S NOT! I promise you no matter how old you are you will absolutely love it. I’m treating the family to an Aladdin Pantomime production at the Queen’s Theatre in Hornchurch next week, and I’m soooo excited I cannot help myself! OH YES YOU CAN! See what I mean? 🙂

But enough Panto drivel! Let’s get back to this amazingly simple chocolate sponge.

No flour. No sugar.

Yes you’ve read that correctly. No flour of any kind is required. All you need is some ground almonds. Sugar is, of course, substituted with erythritol and stevia, the two ‘must have’ ingredients for keto cooks.

Just melt butter, add broken chocolate pieces, add egg yolks whisked with half the sweeteners, add ground almonds, add egg whites whisked with the other half of the sweeteners, and voilà, you have a perfect chocolate sponge mix ready to go in the oven.Sugar free grain free flour free chocolate cake

The result is a moist, lovely sponge cake that no-one will believe to be sugar free and flour free.

Perfect on its own or beautified with a sprinkle of sugar free icing ‘sugar’- you can buy it or make your own by combining erythritol and stevia (click HERE for my easy icing sugar recipe)

For a more indulgent treat, why not add a dollop of fresh whipped cream or chantilly cream, or maybe pour double cream straight onto it, or have a couple of sugar free ice cream scoops on the side, or cover the sponge with a chocolate ganache if you prefer a richer version. Phewww! So many options! But sometimes less is more. I like this lovely chocolate cake as it is, in the nude, nothing added. The slice in the photos is topped with some whipped cream for the munch monster, who needed extra fat for the day – don’t you just love being contrary on the keto lchf regime? 🙂Sugar free grain free flour free chocolate cake

A keto chocolate sponge cake with so many 'frees'... but you will be amazed at how good it tastes.
  1. melt butter in a small heavy base saucepan over very low heat.
  2. break up the chocolate and add it to the melted butter and salt; keep stirring until all the chocolate pieces have melted and you have a dense, creamy, smooth mix; set aside to cool down.
  3. separate egg whites from yolks.
  4. whisk yolks until pale and frothy, then add 50g erythritol and 1 tsp stevia and whisk again.
  5. add the cooled down chocolate sauce to the egg yolks mixture and blend well, then add the ground almonds.
  6. pre heat oven to 160°C fan (180°C static).
  7. whisk egg whites to stiff peaks, incorporating remaining erythritol and stevia a bit at a time as you whisk.
  8. pour the chocolate mix onto the whisked egg whites and fold until combined.
  9. transfer to a buttered 20cm x 20cm cake tin or silicone mould and bake for about 30 mins (fan oven) or until an inserted stick comes out clean.

  1. Looks tasty!!! I have recently tried to cut out a bunch of carbs. it’s amazing how many thing have so much sugar in them! As I am also trying to lower down my blood sugar, as I am pre-diabetic. It’s good thing that I’m still able to enjoy my favorite chocolate cake, with the recipe you’ve shared. Thank you!!

  2. This was yesterdays treat. I think my oven must be slightly hotter than yours as the outside of the cake was just slightly dry. I’ll reduce the temp by 5 degrees next time. The taste was lovely. I topped it with ganache and toasted nuts ( we were having visitors). The dry bits got scoffed without any complaints !

    I made this for tea on Sunday ( we’re very posh in this house )
    as I had visitors staying, it was nothing short of perfection,moist, wonderful texture, & full of flavour.. My friend said ” I can’t believe this is allowed on that Keto thingy diet you eat ” it’s amazing !.. I explained they’d been eating this Keto
    thingy way, since they’d arrived ! But the food is all so tasty & filling, said her man…YES I KNOW, said I, but he said aren’t diets meant to be boring, small plates of food, HOW can you be eating cake ?….I pointed them in the direction of the WONDERFUL Queen Keto website & told them to get some recipes from there, then give a comment on the site,I can’t said my friend, you know I’m dislexic…but it’s funny how you can spell CHOCOLATE just fine I said ( This is starting to sound like a script for panto ) OH NO IT ISN’T …( sorry people, I got carried away then )
    The funniest thing was when my Husband whispered to me ( in that loud voice,
    men do when they whisper ) WHY did you make this fab cake when we had visitors, we have to share it now, they did burst out laughing, and ended up taking the remainder home…anything to encourage people to eat Keto !

  4. It works. Is beautiful. I did not expect this result because there is no baking powder. 100% score for your recipe. I did not have stevia so I had to use only erythritol. Tks for sharing your own recipe.
