Ingredients
- 200 ml QK bone broth - or broth of your choice
- 2 eggs - large
- ⅛ tsp grated nutmeg
- ¼ tsp fine himalayan pink salt
- 1 TBSP collagen peptides powder
Instructions
- bring bone broth to a simmer in a small pot.200 ml QK bone broth
- using a small manual whisk, lightly beat eggs, nutmeg and salt and pour in one go into the simmering broth.2 eggs, ⅛ tsp grated nutmeg, ¼ tsp fine himalayan pink salt
- stir with the whisk and raise the heat to bring the mixture to temperature again.
- keep swirling and scraping the bottom to prevent the eggs from sticking.
- initially, the broth will look cloudy and ruined, then it will resemble porridge, but within 1-2 minutes the egg shreds will start to appear; keep stirring to stop the shreds from clumping together; the stracciatella is ready when the broth liquid separates from the egg shreds and becomes clear again.
- stir in collagen and serve immediately whilst piping hot.1 TBSP collagen peptides powder
Notes
If you're fine with dairy in your carnivore regime, you may wish to incorporate 2TBSP of freshly grated Parmigiano Reggiano in the eggs before you pour them into the broth.
