Skinny Keto Peanut Butter Mousse

Ingredients
- 120 g Quark - fat free, whey liquid discarded
- 60 g smooth peanut butter (U.S. option HERE)
- 25 g icing 'sugar' (U.S. option HERE)
- ¼ tsp vanilla extract (U.S. option HERE)
- 120 g whipping cream
Instructions
- drain the liquid whey from Quark.120 g Quark
- put the Quark, peanut butter, icing 'sugar', and vanilla extract in a glass mixing bowl, then stir with a fork to achieve a paste.60 g smooth peanut butter, 25 g icing 'sugar', ¼ tsp vanilla extract
- in a separate bowl, whisk whipping cream until very firm, then fold it gently into the Quark mixture using a flexible silicone spatula.120 g whipping cream
- fill your serving pots or shot glasses using a piping bag with star nozzle.
- (optional) for added texture, top with biscuit crumbs, chocolate sprinkles, or grated chocolate.
Notes
You can swap the peanut butter for any nut or seed butter of your choice, just make sure to thoroughly stir in any surface oil first.
You can buy the chocolate sprinkles you see in the images HERE (U.S. option HERE).
For biscuit crumbs, my Olive Oil Biscuits are perfect. They are low in calories, crisp, and great for crumbling.
This mousse will stay fresh for up to 3 days in the coldest part of the fridge.
