Keto Low Calorie Condensed Milk

Ingredients
- 500 g whole milk - Arla lactose-free or similar
- 50 g allulose or powdered sweetener like Sukrin or Swerve
- 20 g unsalted butter
- ⅛ tsp xanthan gum - optional, but recommended
Instructions
- put all ingredients in a small saucepan and simmer on very low heat for 1 hour 10 mins, lightly whisking occasionally with a silicone whisk.
- use a fine mesh strainer to strain the liquid, pressing all solids as much as possible through the mesh.
- transfer to a sealable jar, let cool completely, then refrigerate until needed.
Notes
Allulose isn't easily available in the UK. You might wish to try iHerb for availability.
If using erythritol-based sweeteners such as Sukrin or Swerve, you'll find that some crystallisation will occur.
Store in a sealed jar in the fridge for up to 5 days.
