Easy Sugar Free Strawberry Pavlova

Ingredients
- 1 egg white - best if 2-3 days old
- 2 TBSP erythritol
- 1 pinch guar gum
- 40 g double cream
- 80 g strawberries
- 1 TBSP fresh lime juice
- 1 pinch agar-agar
- 1/8 tsp pure stevia powder
- 1 tsp vanilla extract
Instructions
Meringue nests
- whisk egg white until it turns opaque and a little frothy, add 1 TBSP erythritol and continue to whisk until firm, then add the second TBSP erythritol plus the guar gum, and carry on whisking until the mixture becomes very stiff, glossy and dense (continue in 1 TBSP steps if you've adjusted the default servings).1 egg white, 2 TBSP erythritol, 1 pinch guar gum
- spoon 2 equal mounds onto an oven tray lined with parchment paper and shape like nests.
- bake at 80°C static for 2 hours, then leave them in the oven until cooled.
Strawberry compote
- chop strawberries, reserving 2 whole ones.80 g strawberries
- put the chopped strawberries in a small pan with lime juice, vanilla extract, stevia and agar, and simmer on low heat for 5 mins, stirring often.1 TBSP fresh lime juice, 1 pinch agar-agar, 1/8 tsp pure stevia powder
- allow the strawberry sauce to cool and thicken.
Final Steps
- whip cream with vanilla extract until very stiff - or use a siphon.1 tsp vanilla extract, 40 g double cream
- spread, pipe or squirt whipped cream over the outer part of the meringue nest, plus a little in the centre.
- fill the middle of the nest with strawberry compote and top with a strawberry.
Notes
You can make the meringues up to 3 days in advance. They should remain crispy, but if not, place them back in low-heat oven until dry again.
If your meringues become stuck to the parchment paper, ease them off by sliding a large knife under them. Don't worry if a few crumbs are left behind: use them to decorate your serving plate like I did.
Do NOT omit the guar gum. If you do you'll end up with more air than meringues and they'll literally dissolve on your tongue.
