  1. whip cream until firm but still foamy (not solid) and set aside.
  2. grate lemon zest into a medium size bowl, setting aside a little for decoration; add squeezed juice, lemon extract and icing sugar, stirring well; then incorporate mascarpone and finally fold in whipped cream.
  3. spoon into serving bowls and sprinkle reserved lemon zest over the top.
  4. refrigerate at least 4 hours before serving.
Notes
If you can control yourself, leave it in the fridge overnight to intensify the lemon flavour.
It will keep, refrigerated and covered, for up to 72 hours.
