An easy recipe for the lazy keto baker in me. If you have a sweet tooth and not much time in your hand, this one is for you.

  1. whisk dry ingredients until well combined.
  2. wearing disposable food-safe gloves, add softened butter (left at room temperature for 30 mins) and work with your fingers until the mix becomes crumbly.
  3. incorporate whole egg and vanilla paste, and work the mix by hand until smooth.
  4. pre-heat oven to 130C fan (150C static).
  5. take a spoonful of cookie mix, roll it lightly between your palms, shape into a ball and flatten to half a centimeter.
  6. place it on a baking tray lined with parchment paper.
  7. repeat until you've used up all the cookie mix.
  8. bake for 15-20 mins, then remove from oven and let cool completely before handling.
Notes
Wearing disposable food-safe gloves will keep the cookie mix cool and it won't stick to your hands.
