  1. pre-heat oven to 160C fan.
  2. separate eggs.
  3. whisk egg white until very stiff and set aside.
  4. melt chocolate and butter, then stir in grated and strained zucchini, egg yolks, double cream, sweeteners, lupin flour, salt and baking powder.
  5. incorporate egg whites by folding into the mix very gently.
  6. spoon into 12 cupcake moulds.
  7. bake for 20 mins.
  8. let the cupcakes cool down completely before removing them from the moulds.
  9. (optional) sprinkle with icing sugar just before serving.
Notes
Store them uncovered, at room temperature, for a cupcake texture.
If refrigerated, uncovered, they will have a fudge-like consistency.
