Lightning fast and easy to make, these sugar free, low carb, no-bake orange biscuits are perfect with a lovely cup of tea. And you don't even need an oven!

  1. put the butter in a medium glass bowl and soften it a little in the microwave on low setting.
  2. add all other ingredients except icing sugar.
  3. work by hand until dough has a non-sticky consistency.
  4. sprinkle some almond flour on a sheet of parchment paper and place the pastry on top.
  5. cover with another sheet of parchment paper (or cling film) and flatten with a rolling pin to 2-3mm height.
  6. cut out 12 shapes.
  7. smear butter on a pancake pan and place over high heat.
  8. when the butter starts to sizzle, reduce heat to a minimum and add the biscuits.
  9. after 2 minutes, flatten each biscuit with a spatula so they are of uniform height.
  10. cook on both sides until golden brown all over (about 10 mins in total).
  11. remove from heat and let biscuits cool down in the pan.
  12. sprinkle icing sugar and serve.
Notes
