An excellent, flavoursome alternative to cauliflower mash. Pair it with any meat or fish main course.

Ingredients
  • 450g swede (1 small) (375g net)
  • 1 TBSP fine Himalayan pink salt (U.S. option HERE)
  • 10g butter
  • 10g Parmigiano Reggiano
  • 25g crème fraîche or sour cream
Instructions
  1. peel, top and tail the swede, then chop it into small cubes and transfer them to an adequately sized pot.
  2. top with water so all cubes are submerged, and place the pot over high heat, lid on.
  3. once you reach a fast boil, add salt, lower heat so you have a rolling boil, cover with lid, and cook for 25-30 minutes until the biggest pieces are tender enough for a fork to go through without resistance.
  4. drain, then purée using an immersion (stick) blender (U.S. option HERE).
  5. add butter, Parmigiano and crème fraîche, stir, and adjust seasoning to your taste.
