An amazing oopsie that tastes divine. My secret ingredient makes it unique.

Ingredients
  • 1 medium egg
  • 30g mascarpone (or cream cheese or mayonnaise)
  • 1 tsp (2g) lupin flour (for U.S. click HERE), or world-wide delivery option HERE - use code QUEENKETO5 for discount at checkout)
  • pinch of cream of tartar
  • pinch of fine Himalayan pink salt (U.S. option HERE)
Instructions
  1. pre-heat oven to 170ÂșC static.
  2. whisk egg white with cream of tartar until it becomes a very stiff foam.
  3. whisk egg yolk with mascarpone, salt and lupin flour to obtain a smooth paste.
  4. scoop yolk mix onto egg white and fold in thoroughly but gently so as not to deflate the mix too much.
  5. spoon two equal mounds onto a baking tray lined with parchment paper, then shape and flatten them a little.
  6. bake for 15-18 mins until amber brown.
Notes
Depending on the parchment paper you use, your oopsie may stick a little. If that is the case, let it cool on the paper, then slide a large knife under it to ease it off.
If you make it in advance, or you use only half, allow it to cool completely, and store in an airtight container in the fridge for up to 3 days.
Re-heat to restore crispness.
