Can't go wrong with this super quick and easy lunch. A classic Italian dish with an injection of good fats thanks to the burrata.

Ingredients
  • 100g muskmelon (or Cantaloupe)
  • 60g San Daniele ham (or Parma ham)
  • 200g fresh burrata
  • a few coriander leaves
  • a pinch of chia seeds (U.S. option HERE)
Instructions
  1. de-seed and slice the melon.
  2. wrap ham around each melon slice and plate.
  3. add whole burrata.
  4. add chia seeds and fresh coriander leaves.
Notes
San Daniele ham is paler and sweeter than Parma ham. If you prefer the saltiness of Parma ham, or you can't get hold of San Daniele, go for it.
