A rare vegan recipe for my keto repertoire. Really satisfying and perfect for those colder winter days when you can't beat a hot bowl of porridge. A true delight, with far fewer calories than the usual keto breakfast choices.
  1. *take 1 TBSP (13g) of chia seeds and place it in your coffee grinder/nutribullet/whatever you use; pulse 3-4 times until powdery; use 1 TBSP (6g) of the powdered chia - store the rest in a sealed jar away from sunlight.
  2. weigh all dry ingredients, whisk, and set aside.
  3. heat milk to boiling point, either on the hob or in the microwave, then add dry ingredients and whisk mmediately to prevent lumps.
  4. leave to bloom for a couple of minutes.
  5. add your preferred sweetener (optional) and enjoy on its own or with a sprinkle of toasted sliced almonds, a few berries, some toasted coconut flakes, or anything else you decide.
Macronutrients do not include additional berries, fruit, nuts, coconut or other toppings.
