Yummy soft biscuits or cookies that can be made in a flash and taste great. With or without the chocolate topping. The choice is yours.

  1. whisk whole egg.
  2. add salt and vanilla paste and whisk again (a few lumps will be fine).
  3. incorporate all other ingredients except chocolate and hazelnut oil.
  4. knead the mix by hand quickly until smooth and compact.
  5. pre-heat oven to 160ºC fan (180ºC static).
  6. take a small amount of pastry, quickly roll it into a ball between your palms, then press it so you have a flat circle shape and lay it on a baking tray lined with parchment paper.
  7. repeat until all pastry has been used up.
  8. make central holes with a small cookie cutter or other round implement.
  9. re-shape the cut outs to make more biscuits!
  10. bake for 10-12 minutes.
  11. allow to cool down completely, then melt chocolate, stir in hazelnut oil and swipe each biscuit with a fork to make lines across (or use your preferred technique).
Notes
These cookies will keep for up to 1 week in a sealed container - if you can resist eating them all!
