Lots of recipes require icing sugar, either in the batter mix or as a sprinkled topping. So what do you do if you’re following the ketogenic lifestyle? Simple. You make it yourself.

If you have a sweet tooth or you like baking desserts for your family, your keto baking arsenal should include stevia and erythritol.

Be wary of cheap brands of ‘stevia’ that are not pure and include bulking agents and even sugars! The powder stevia I use is this one (U.S. option HERE) I know it’s not the cheapest, but it is the purest form of powder stevia I can find, as well as the best tasting.  It has no liquorice after taste, unlike its competitors. But most importantly, it is very, very, very sweet. So yes, it seems expensive on the surface, but when you consider that it takes only 1/2-1 teaspoon to sweeten an entire cake, you soon realise that it’s actually value for money. Yep, You read that correctly, 1/2-1 TEASPOON for one whole cake.

The erythritol I use is this one (U.S. option HERE) There are many choices on the market, but I prefer this one because it is the cheapest non-GMO erythritol I could find and the cooling effect is minimal. 

Arrowroot isn’t an ingredient many people use, but it’s a good one to have in the cupboard. It’s cheap and has a long shelf life. I use it sparingly because, although natural and grain free, it is high in carbs, but it is extremely useful for thickening sauces, making a roux and making cake mixes less heavy. I use this arrowroot flour.make your own sugar free icing sugar

Make your own sugar free icing sugar – 3 Easy Options .

 My favourite sugar free icing sugar. It is excellent for sprinkling on top of cakes, pastries and biscuits, and consists of a 1:2 ratio of  stevia and arrowroot.

Just measure the stevia and put it into a coffee/nuts grinder or similar gadget. Blitz for 2-3 seconds, shake and blitz again for a few more seconds. When you see a powder consistency, stop grinding and leave it to settle for 5 minutes or so. If you uncover the powder too soon, a lovely white cloud will spread all over your kitchen worktop!

Transfer the powder to a sealable jar, add arrowroot, shake to combine and your icing sugar is ready.  It will last ages in the cupboard. Use it sparingly, for decorative purposes.make your own sugar free icing sugar

Make your own sugar free icing sugar – Option 2.

This is handy if you need to add sugar free icing sugar, rather than granules, to a batter mix. Just mix 1 tsp stevia and 3 tablespoons erythritol. Put 1/2 the mix in the coffee grinder and blitz as per method 1. Repeat for the other 1/2. Scoop out and it’s ready to use. I use it especially in cold desserts, to avoid the granular sensation of undissolved erythritol.

The cheat one – Option 3

Strictly speaking this isn’t really another ‘option’. It’s more of a cheat solution. Sukrin Icing 'Sugar'  is a bit of an expensive choice, but if you don’t want the bother of grinding powders and storing them, it’s a convenient option. I have some in the cupboard that I only rarely use, as a stand by item. Be aware that it will give a cool sensation because it contains  a lot of erythritol and just a bit of stevia, so I don’t recommend it for sprinkling over desserts.

  1. put stevia in a coffee grinder.

  1. put stevia and erythritol in a coffee grinder.
  2. blitz for 2-3 seconds, shake and repeat until powdery.
  3. transfer to a sealable jar, repeat above steps until jar is filled, shake and store in a cool, dark spot.

You add egg white for Royal Icing, water for Simple Water Icing, butter and/or cream cheese for Butter Frosting.
