The recipe came about because I couldn’t think what to have for lunch, but I knew I wanted something different from the usual eggs, bacon, salami or cheese. After rummaging in the fridge and cupboard, I pulled out a tub of mascarpone, an avocado that was getting beyond soft and needed to be eaten, and a pack of smoked, cooked mackerel that was fast approaching its best-consumed-by date.

A healthy lunch doesn’t have to be boring.

Mackerel is an excellent oily fish, high in omega 3 fatty acids, proteins and potassium. It also tastes delicious. The only thing I don’t like about whole, fresh mackerel is that it has too many bones to pick. The alternative is to buy packaged fillets that are smoked and pre-cooked, so they’re ready to be consumed straight away, with no fuss and no bones.

Avocado is, well, avocado. Surely you already know all the benefits of this wonderful healthy fruit. How can you not love avocado? It’s healthy, deliciously creamy and versatile.

Mascarpone is high in fat, has good quality proteins, no additives and only a few carbs. It is one of my favourite ingredients ever, as it’s just as versatile, if not more so, than avocado. You can make it at home, but I am too lazy for that, plus it’s inexpensive and available in all grocery stores.

Parsley is a superb herb and much more than a just a decorative addition to recipes. It has volatile oils, anti-oxidants and vitamins. All of which are extremely important to health.

Coriander (chilanto) is another super herb. Pretty as a decorative addition, but also rich in vitamins, anti-oxidants, minerals. All good for you.

Lime has a lovely scent that masks the strong smell of fish and has a high vitamin C content.

Turmeric is simply amazing. It contains curcumin, which is a powerful anti-inflammatory and antioxidant , so why not add some to this pate?

Ready to make my low carb smoked mackerel pate?

Blitz everything for a few seconds at a time, adding a little olive oil if too dry, add salt and spices to your taste and scoop into a pretty serving dish.low carb smocked mackerel pate

The recipe will yield a lot (10 servings). By filling various glass moulds, you will be have a ready made supply in the freezer to just take out and defrost as and when you fancy some of this delicious heavenliness.

To make this delicious and healthy low carb smoked mackerel pate you just blitz all ingredients and serve. That simple!
Ingredients
  • 250g smoked cooked mackerel
  • 250g mascarpone
  • zest and juice of 1 (5 cm) lime
  • handful of parsley
  • handful of coriander
  • 100g ripe avocado (net weight)
  • ¼ tsp fine Himalayan pink salt (U.S. option HERE)
  • ¼ tsp paprika
  • a little extra virgin olive oil (if paste is too dry - depends on fish) (U.S. option HERE)
  • ¼ tsp turmeric
Instructions
  1. put all ingredients in a blender and pulse for a few seconds at a time until you have the consistency that you prefer, adjust seasoning to your taste and serve.
Notes
Divide into 10 individual portions (or 5 double portions) and freeze excess portions if not being used immediately.

  1. Hi, just eating this for lunch with the focaccia. I had to do loads of swaps for things I didn’t have in – cream cheese for mascarpone, and the only herbs growing my garden yet – chives and sage – for the parsley and coriander. Still tastes amazing!

  2. I made this pate last week and it was absolutely delicious. Very happy I found this recipe and your site. I might tweak the spices a little on the next batch, but wow it’s good.
